Cusco is known for its rich cultural heritage, ancestral knowledge, and agricultural diversity, including thousands of native potato and tuber varieties preserved by local communities. Its unique geography and climate also make it suitable for coffee production, which has been gaining recognition in recent years.

One example is Hugo Pareja and his wife Flor Lopez, coffee producers from Inkawasi who have built their livelihood around coffee farming. Hugo began growing coffee at age 17, following the tradition of his mother, and now works alongside his wife and children. After initially cultivating Typica, they received a new high-quality coffee seed from their cooperative, later identified as Geisha. With training in selective picking and fermentation, they improved their coffee quality and discovered the potential of what they now call “Inca Geisha,” a unique local mutation believed to have developed through cross-pollination in the region.

Today, Hugo and Flor continue to expand their Geisha production while also growing Typica, Bourbon, Caturra, and Catimor. Their farm is organic, using natural waste and small-animal byproducts as fertilizer, and they prioritize biodiversity and shade through various tree species on their land.
